Fuiyoo...setelah hampir 8 bulan lia tak update Cooking Blog lia akhirnya malam ni sempat juga menghantar posting beberapa resepi terbaru dalam koleksi....semuanya sedap sedap belaka kalau tak percaya meh tgok pic pic kat bawah ni...

RECIPE OF THE DAY 7(MEE UDANG)

Ini lah MEE UDANG PULAU PINANG yg betul betul "Hou-Liaw"...Wahahahahahahaha......

1 kati mi kuning
½ kati udang basah - bersaiz sederhana
10 tangkai cili kering - dikisar
5 biji buah keras}di kisar
2 biji bawang besar} di kisar
2 ulas bawang putih} di kisar
Sedikit belacan } di kisar
Sedikit udang kering} di kisar
3 camca teh sos cili
3 camca teh sos tomato
½ sudu teh gula pasir 4 batang sawi
½ kati taugeh
2 pokok daun bawang
2 tangkai daun sup
5 biji tahu - goreng dan potong empat segi sederhana nipis.
5 biji cili masak
Limau kasturi
Sedikit bawang goreng
CARA CARANYA
Rebus udang basah terlebih dahulu. Kemudian toskan airnya asingkan ketepi. Ambil kepala udang dan kisar. Kemudian ambil air kepala udang tadi satukan dengan air rebusan yg sedia ada.
Panaskan minyak masak dan tumis bahan kisar seperti bawang merah/putih/belacan dan udang kering.
Setelah naik wanginya masukkan sos cili/tomato, garam, gula dan serbuk perasa.
Seterusnya masukan air rebusan udang yang telah disimpan tadi.
Untuk sayuran tadi sawi dan taugeh hendak lah dicelur terlebih dahulu. Begitu juga dengan mi kuning.
Setelah selesai semuanya hidangkan bersama bawang goreng, daun bawang, hirisan tahu goreng dan daun sup. Perahkan limau kasturi.(boleh di tambah dgn hirisan Telur rebus jika suka) KLIK untuk baca selanjutnya...

DESSERT(Watermelon Berry Zinger)

This a simple but marvoulles dessert that I ever had....Should try everyone!
Ingredients
3 cups seedless watermelon
6 large fresh strawberries, halved & frozen
1/2 cup frozen raspberries
1/2 lemon, juice of
1 1/2 cups lemon sherbet
4 ounces coconut rum
6 ice cubes
4 watermelon wedges
3 cups seedless watermelon

Directions
1Place watermelon, Strawberries, lemon juice, sherbet,rum, and ice in a blender.
2Blend until smooth.
3Pour into glasses garnished with a watermelon wedges.

RECIPE OF THE DAY 6(Simple Basic Pizza)
A pizza that has very basic ingredients, but my family and friends love the taste.For the topping its up to all of you what you desire...whether you want chicken,crabmeat,pine apples,seafood,mushrooms,sausager,smoke chicken ham or anything else...But please remember to cover them up again wth tomato sauce and mozarella cheese before goes into the oven...if you want the pizza to be a little bit hot and a taste of asean you can put some cupsicum(Cili benggala) as the topping....
Ingredients
3 cups luke-warm water
1 tablespoon yeast
1/4 cup sugar
1 tablespoon salt
8-10 cups flour
2 tablespoons cornmeal
3(8ounce)cans tomato sauce
6 cups shredded mozzarella cheese
Directions
1.Add water, yeast, sugar, and salt to mixing bowl.
2.Let sit 10 minutes. You should see bubbles of yeast (if not, you may have the wrong water temperature: start over).
3.Mix in flour conservatively - don't add too much. After mixing it in, keep adding until dough is not wet looking and can be kneaded.
4.Knead dough until smooth.
5.Let rise at least 30 minutes (ideally 1 hour) at room temperature.
6.Pre-heat oven to 475 degrees.
7.Split dough into pieces (3-5 depending on size of pizza).
8.Roll dough out each to the size of your pan (toss if desired to help reach appropriate size).
9.Sprinkle corn meal onto each pan.
10.Place dough onto pans, stretching or squeezing if necessary to fit properly.
11.Spread some tomato sauce onto dough, leaving about an inch around the outside without sauce.
12.Spread some cheese on top of the sauce.
13.Add additional toppings as desired.
14.Bake for 8-12 minutes, or until dough is fully cooked. The bottom of the pizza should be at least a little crispy.

RECIPE OF THE DAY 5(CHEESE CAKE)

14 rectangular graham crackers
3 Tbsp. sugar
1/2 tsp. cinnamon
8 Tbsp. unsalted butter at room temperature
Filling:
4 (8oz) packages cream cheese at room temperature
1-1/4 C. sugar
4 eggs
1 Tbsp. fresh lemon juice (I have used the bottled kind before and it turned out fine)
1 tsp. vanilla

Directions
1.To prepare the crust, place the graham crackers in a large food storage bag.
2.Finely crush with a rolling pin.
3.Place in a bowl, and add the sugar & cinnamon, stir to mix well.
4.Add butter until well blended.
5.Scatter crumbs over the bottom of a 9 inch springform pan.
6.Cover with plastic wrap and press evenly over the bottom & up the sides of the pan.
7.Refrigerate until ready to use.
8.Heat oven to 350 degrees.

6.Bake in 350 degree oven for 50 minutes or until center is just set. (it will be a little jiggly)
7.Remove pan from oven to a wire rack to cool completely.
1.Beat cream cheese in large bowl with mixer until well blended & smooth.
2.Gradually beat in sugar until well blended.
3.Add eggs, one at a time, beating well after each addition.
4.Add lemon juice & vanilla; beat until well blended.
5.Pour cheese mixture evenly into crust lined pan.
6.Bake in 350 degree oven for 50 minutes or until center is just set. (it will be a little jiggly)
7.Remove pan from oven to a wire rack to cool completely.
**My cheesecake center tends to drop when I do this, so what I'll do is shut the oven off and pull the door open a little. This tends to help it from dropping.**
8.Refrigerate for at least 12 hours or over night.
9.To serve, remove side of pan and cut into wedges.
10.Eat plain or drizzle your favorite fruit and it's juices over the top.

CAESAR SALAD
Di blog ni kita sering membincangkan tentang fakta kesihatan tentang beberapa jenis penyakit kronik yg kita semua sedia maklum...dan yang terbaru ialah posting lia ttg diet yg betul bagi pengidap penyakit buah pinggang...jadi kesinambungan dari pada itu di sini ada satu resepi yang sesuai bagi mereka yang mengamalkan gaya hidup sihat...
The credits goes to my dear friend HILMI...thanks 4 the lovely recipe...jgn tekejut dia mmg pandai masak...maybe next time kita akan share banyak lagi resepi dgn HILMI...
Oleh kerana salad ni adalah sejenis makanan barat so bahan bahan dia juga dari barat...tapi jgn bimbang bahan bahan dia ada di pasaraya pasaraya kat Malaysia ni...
Yang di perlukan ialah:
- Daun salad(kalau boleh dapat kan iceberg salad tp salad biasa pun memadai)
- Caesar Salad Sos(boleh didapati di pasaraya)
- Keju Parmesan
- Cruton(sejenis biskut kecil,ada di jual di pasaraya)

Cara Membuatnya:
Di campurkan semua bahan tadi dalam mangkuk.Semua nya tertakluk kepada berapa banyak anda ingin hasilkan salad ni...kalau nak buat banyak maka bahan bahan lain pun hendaklah di masukkan bersesuaian sukatannya dgn salad.Jgn di gaul terlalu kuat nanti akan menyebab kan daun salad renyuk dan salad kita tak nampak segar.sebaik baik nya untuk buat salad itu sebati dgn sos nya tanpa merenyuk kan daun adalah dengan menangkup kan mangkuk salad dgn satu mangkuk lain yg sama besar...dan menggoncang goncangkan bahan tadi agar sebati.Ini akan memelihara kesegaran daun salad dan pada masa yg sama bahan bahan menjadi sebati.Dan kita tak perlu masukkan sebarang serbuk perisa kerana sos dan cruton tadi sudah memberi perasa kepada salad.
Wallahhhhhh....dah siap salad kita...hidangan ini amat sesuai untuk mereka yg sedang diet tau yg gemar makan sayuran segar....cubalah...!!!Enak dan menyihatkan...

(RECIPIE OF THE DAY 3)KEK COKLAT BASAH

Seorang teman blogger saya telah meminta saya upload kan KEK COKLAT BASAH..jadi sebagai menunaikan permintaan teman saya yg satu ni...untuk resepi kali ini saya uploadkan resepi yang di minta...harap berpuas hati...Ada banyak cara dan jenis kek coklat...tapi yg saya pilih kli ini ialah kek coklat yang paling simple...resepinya pun mudah di dapati..tapi hasilnya insyaallah puas hati...cuba lah...dan jika ada sebarang komen atau pertanyaan sila tinggal kan di komen bawah...GOOD LUCK!

Kek Coklat Basah
Bahan
180 gm butter
250 gm gula kastor
3 biji telur
300 gm air
250 gm tepung gandum + 50 gm serbuk coklat +1 s/k baking powder +1 s/k soda bikarbonate (kesemuanya di ayak bersama)
Cara:
1. Gula dan butter dipukul sehingga kembang dan gebu.
2. Masukkan telur satu persatu.
3. Masukkan tepung gandum(yg telah di ayak bersama bahan bahan tadi) dan akhirnya masukkan air pula.
4. Bakar dalam oven yg telah dipanaskan 180'C selama 50 -60 minit.
Topping Coklat :
250 gm cooking coklat
30 gm cocoa butter
Cara Membuat Topping:
1. Masukan bahan dalam periuk kecil.
2. Panaskan periuk kecil dalam periuk/pan yg lebih besar yg berisi air dan sentiasa kacau supaya coklat larut.
3. Sejukkan sebentar supaya coklat agak pekat.
4. Curahkan perlahan atas kek coklat dan ratakan dengan spatula kek dan gunakan sikat kek untuk membuat corak.
5. Hiaskan topping mengikut kreativiti masing masing.

BLACK FOREST CAKE
Ingredients:
(A)
4 egg yolks
40g sugar
1/4 tsp salt
(B)
85ml corn oil warmed
25g cocoa powder
(C)
135ml warm water
(D)
125g cake flour
1/2 tsp baking soda
1/2 tsp baking powder
(E)
4 egg whites
1/2 tsp cream of tartar
50g sugar
Simple syrup plus
Filling
8 marachino cherries with stems
15 oz can pitted sour cherries halved
1 tbsp cornflour plus
2 tbsp water
400ml whipping cream whipped with 2 tbsp icing sugar
80g shaved Dark Chocolate
Method:
1. Mix ingredients (A) well with a hand whisk.
2. Stir cocoa powder in warmed oil until dissolved and pour into yolk mixture.
3. Stir (C) into yolk mixture.
4. Sieve ingredient (D) and stir it into yolk mixture.
5. Whip egg whites in a clean mixing bowl until big bubbles are formed. Add in the cream of tartar and whip and add in sugar in 3 portions while whipping the whites. Whip until stiff peaks formed.
6. Pour 1/3 white into yolk mixture and blend well.
7. Pour yolk mixture into the remaining egg white mixture and blend well.
8. Pour batter into ungreased 9 inch baking pan and bake at 350 f for 45 minutes or until cooked.
9. Invert cake and leave to cool. Then cut cooled cake into 3 layers.
10. Whip the cream with icing sugar until stiffand leave in the fridge.
11. While cake is baking, prepare the filling.
a. Strain juice of pitted cherries into saucepan.
b. Bring juice to the boil and thicken with cornflour mixture.
c. Bring back to the boil and cook for 1 minute. remove from heat and let cool.
d. Add in the halved pitted cherries.
12. To assemble cake:

a. Slice cooled cake into 4 thin slices.
b. Place one slice of cake on a cake base and brush generously the simple syrup all over the surface.
c. Cover cake with whipped cream and then 1/3 of the filling.
d. Top with another slice of cake and repeat process , simple syrup, cream and filling.
e. Iced the whole assembled cake with whipped cream and decorate with shaved chocolate and marachino cherries.

Masa tengah makan malam dengan kakak aku tadi sembang punya sembang terkeluar cerita ttg nasi ayam...Nasi ayam ni ada banyak jenis nasi ayam...yang selalu kita jumpa kat kedai kedai atau kat pasar malam tu nasi ayam biasa atau kita boleh katakan nasi ayam citarasa org melayu...tapi sebenar asal usul nasi ayam ialah dari bangsa cina....Dan yang paling sedap ialah nasi ayam hainan/hakka....kalau nk tau stail makan dia mcm mana...korang pegi la kat CHICKEN RICE SHOP...kat ctu ada nasi ayam hainan/hakka style...So kat siniLia nak kongsi la ngankorang resepi NASI AYAM HAINAN.

NASI AYAM HAINAN
BAHAN-BAHAN:
1 ekor ayam
Sos tiram
Kicap pekat
Garam secukup rasa
minyak bijan
1 batang timun dihiris
2 biji tomato dihiris
daun salad
BAHAN-BAHAN(a)(Digiling)
2 inci halia
1/2 labu bawang putih
CARA-CARA
1.Gaulkan bahan(a) bersama ayam,sos tiram,kicap pekat dan garam. Perap selama 4 jam. Kemudian campurkan segelas air dan rebuskan ayam sampai masak. Angkat ayam yg dah masak dan dibasuh supaya halia tidak melekat pd ayam. Kemudian ayam digoreng.
2. Air lebihan dr rebusan ayam ditapiskan dan dijadikan kicap ayam.3.Potong ayam dan hidanglah dgn hirisan timun, tomato salad dan kicap ayam tadi dicurahkan ke atas ayam.
MEMBUAT NASI NYA
BAHAN-BAHAN
3 cawan beras direndam sampai putih
1 ulas bawang putih dihirs
2 cm halia dihiris
Air rebusan ayam
3 sudu besar mentega utk menumis
CARA CARA:
1. Panaskan mentega, tumis bawang putih dan halia sehingga kuning. Masukkan beras, tumis beras sampai nampak kekuningan. Masukkan air rebusan ayam (anggaran air lenih kurang 1/2 inci dr paras beras) Masukkan garam secukup rasa dan biarkan ia masak.
SAMBAL
BAHAN-BAHAN
5 biji cili besar merah
5-10 biji cili padi
Sos tomato
Limau nipis
Sedikit air, garam, gula dan bahan perasa.
CARA MEMBUAT SAMBAL
Blend kesemua bhn dan jadilah sambal cili . Hidangkan nasi ayam bersama sup, ayam dan sambal cili.
